Anelletti al forno: Sicilian-style pasta casserole

Ingredients for 4 servings:

  • 2 small eggplants
  • 1 red onion
  • 3 tablespoons of olive oil
  • 400 g of minced meat, mixed
  • 125 ml of dry red wine
  • 200 g of frozen peas
  • 600 ml of tomatoes, strained
  • 1 bunch flat-leaf parsley, chopped
  • Anelletti (or other small type of pasta)
  • about 1 liter of neutral vegetable oil for frying
  • breadcrumbs
  • 1 ball of mozzarella
  • 100 g of grated pecorino cheese
  • 50 g of parmesan
  • Salt, pepper

Preparation time:

  • 50 minutes (plus 35 minutes of baking time)

And here’s how it’s done:


  1. First, wash the eggplant well, then remove the tips and cut the flesh into small cubes. Season them with salt and set them aside for now.
  2. Now it’s time to make the sauce. First, peel and finely chop the onion. Heat the olive oil in a deep frying pan and fry the minced meat until it crumbles. Then add the onion and peas and pour in the red wine. As soon as the steam dissipates, you can pour the strained tomatoes. Wash and chop the parsley and stir into the sauce. Season everything with salt and pepper and simmer over low heat for 30 minutes.
  3. Meanwhile, preheat the oven to 180 degrees. We put a pot full of salted water. Cooking time should be half of the time indicated on the package. Cook the pasta, drain and add to the sauce. Mix everything well and season as desired.
  4. Dice the eggplant and heat a liter of vegetable oil in a saucepan. Dip a wooden spoon into the hot oil. If bubbles form on the spoon, the fat is hot enough. Fry the eggplant cubes in oil until crispy. Then remove from oil and drain on kitchen paper.
  5. Grease a large casserole dish with oil and sprinkle with breadcrumbs. Now pour half of the noodles with the sauce into the casserole. Dice the mozzarella and place half on top of this layer, along with the sauteed eggplant and half of the pecorino. Now cover the rest of the pasta with the sauce and top with the remaining mozzarella, pecorino and parmesan.
  6. Put everything in the oven and let it bake for about 35 minutes. It’s delicious to eat!
